Ingredients

  • 250 g (1 cup) almond flour
  • 3 large ripe bananas
  • 2 tsp gluten-free baking powder
  • 1 tsp vanilla bean paste or vanilla extract
  • 3 tbsp coconut oil melted or use olive oil
  • 100 g (4 oz) berries fresh, frozen or dried is fine - just check no added sugar if avoiding refined sugars

Instructions

  • In a mixing bowl, mash the bananas and add the vanilla bean paste and mix together.
  • Add the baking powder and almond flour to the mixture and stir together.
  • Next add the coconut oil and mix together until a smooth consistency.
  • Then add your choice of fresh or dried fruit to the mixture and combine. (If using frozen, ensure fully defrosted before using.)
  • Pre-heat oven to 190℃ / 375℉. Then, scoop the batter into muffin cases or muffin tray.
  • Bake for approximately 20-25 minutes. Then remove from oven and allow to stand for half an hour.
