Gluten-Free Almond & Blueberry Muffins | Vegan Friendly

Ingredients
  

  • 250 g (1 cup) almond flour
  • 3 large ripe bananas
  • 2 tsp gluten-free baking powder
  • 1 tsp vanilla bean paste or vanilla extract
  • 3 tbsp coconut oil melted or use olive oil
  • 100 g (4 oz) berries fresh, frozen or dried is fine - just check no added sugar if avoiding refined sugars

  • Muffin tray or cupcake cases

Method
 

  1. In a mixing bowl, mash the bananas and add the vanilla bean paste and mix together.
  2. Add the baking powder and almond flour to the mixture and stir together.
  3. Next add the coconut oil and mix together until a smooth consistency.
  4. Then add your choice of fresh or dried fruit to the mixture and combine. (If using frozen, ensure fully defrosted before using.)
  5. Pre-heat oven to 190℃ / 375℉. Then, scoop the batter into muffin cases or muffin tray.
  6. Bake for approximately 20-25 minutes. Then remove from oven and allow to stand for half an hour.
  7. Enjoy!
